It was on one of those golden late autumn days of preternatural clarity that I drove up the ‘No Through Road’ to Fairburn Farm. Unravelling myself from the car, I took a few minutes just breathing in the magical view across the Koksilah Ridge and there wasn't even a sound to disturb the bright morning air.....

.... I loved it already. But the best was yet to come, for Fairburn Farm is home to the only herd of River Water Buffalo in North America. Coming face to face with these noble beasts (and their excellent hairstyles) is a great experience. Mara is a wonderful chef and host who, when not taking her mid October to late November break to lead off the beaten track tours to Italy, is scouring nearby farmers' markets for produce for the spectacular meals she serves here. Meals are based on the best seasonal, local food she can get her hands on, much of which is grown in the farm's own extensive gardens. You can even improve your own culinary making, not just tasting, skills by taking one of her popular cookery classes. Inside or outside the kitchen, this is a true retreat. Endless forest and pasture surround you and a beautiful creek winds lazily along the bottom of the ridge. The farm bedrooms are comfortable and there is the cottage for those wanting extra seclusion. Disappointment will only arise if you stay a night, not a week. Fabulous walking.
